recipe 3 ,nutritious mashed potatos with chikpeas

Ingredients:

1 kg potatoes peeled (PURPLE CONGO long oval potato ,retain it's colour when cooked , KING EDWARD an English variety floury potato ,creamy with white flesh ,DESIREE, waxy, oval , pink skin with creamy yellow flesh. NICOLA, yellow flesh with creamy skin. TASMANIAN pink eye (Southern Gold) round, waxy creamy skin with a mauve blush at one end. These are just a few examples that make very good and smooth mashed potatoes)

300gm chickpeas soaked, skin removed or dhal /lima beans
1/2 tsp of mixed herbs )__if desired chop fresh herbs
1/2 tsp of thyme )
100gm soy butter
100gm soy cheese
350ml soy milk
salt and pepper to taste

Method:-

Boil peel potatoes with chickpeas or any desired lentils until soft,( about 40 minutes), drain water and keep aside, mash together cooked potatoes and chickpea , mixed herbs, soy butter,soy milk , mix well and add pepper and salt.

* Water drained from the boiled potatoes cans make a nice and delicious mushroom soup, just prepare the mushroom soup as you usually do but add the potatoes water and soy milk.
