chickpeas recipe 2.

RECIPE NO 2 - CHICKPEAS FRITTERS

Ingredients:

200gms of cooked chickpeas ,
2 pieces of tofu, mashed
3 Tbsp organic wholemeal flour
1 piece of toasted seaweed cut into small strips
1/2 cup of grated carrot
2 tsp toasted sesame seeds
1 table soy butter or margarine
2 tsp corn flour
100 gm of veggie ham cut into strips
2 tsp chop coriander leaves
if desire add 1/2 cup add chop big onion
1/2 cup of olive oil for frying
1 cup of bread crumbs mix with 1 Tbsp of wheat flour, dash of pepper and salt for coating the fritters
hot dog buns

Method:

Mash and mix all the ingredients together except the bread crumbs
shape into desired size hot dog/fritter shape, roll it over the bread crumbs
put 2 Tbsp of olive in the frying pan - fry the fritters

To Serve:

cut buns into halves - lightly spread with soy butter, brown it slightly in the hot pan. Sandwich 1 piece of chickpea fritter with prepared buns...add cucumber and tomato sauce or vegetarian salad dressing for a quick snack ( fritters can be prepare one day earlier)

This nutritious and healthy snack is good for traveling or a quick bite for people who are busy, share this healthy snack with non vegetarian friends.
